Zesty carrot and ginger soup

Ginger, the superstar of this recipe, brings not only its zesty flavor but also a myriad of medicinal properties. Renowned for centuries, ginger boasts anti-inflammatory and digestive benefits, making this soup not just a treat for the taste buds but also a soothing elixir for your body. Best of all, it's so quick and easy to make!


What you will need ...
  • 2 sticks of celery - chopped

  • 1 medium white onion – chopped

  • Olive oil

  • 2 inches of fresh ginger

  • Bunch of coriander

  • Bag of carrots (to make it even easier, buy the already cut and washed kind!)

  • Vegetable broth


How to make it ...

1. Sauté celery & onion in olive oil - in a large saucepan.

2. Add carrots, and peeled ginger.

3. Cover with broth.

4. Put 2/3 of the fresh coriander in with the soup cook.

5. Gently cook until soft.

6. Take out part of the ginger and all of the cooked coriander.

7. Put in as much of the cooked ginger as you wish – depending on the ‘zing’ you’d like to achieve. 8. 8. Use immersion blender to blend.

9. Add fresh coriander as garnish.
